This week is ‘Great British Game Week’ a week-long national celebration of all things game, encouraging people to taste game for the first time and try new products which have local high-quality British game in them.
So this year we have expanded the range of fresh, sustainable game available for our pupils who were not only taught about the nutritional value and provenance of game in butchery and cooking demonstrations in class but also to have the opportunity to enjoy the same game in their dining hall dishes thanks to our Queen’s College Catering Team.
Huge thanks in particular to local Lamberts Castle, and to fellow Eat Game Awards friends Deer Box Limited, our pupils at Queen’s College have learning high meat skills with fresh pheasant, duck and partridge and venison in our Food and Nutrition classes. Pupils have been taught to make foods from delicious hand-raised hot water pastry game pies to savoury game bakes with homemade rough puff, from game goujons to pan-fried game on a homemade bruschetta with homemade mayonnaise. While in the dining hall pupils have had the chance to enjoy with lean sustainable wild organic venison tasters with venison crostini’s with horseradish cream, spiced venison poppadom’s with aubergine and pomegranate and venison tartlets with creamed potato and chilli jam.
Friend of Queen’s College, William Sitwell, BBC MasterChef judge, restaurant critic, and author, said: “Cooking with and eating game isn’t just a sensible, sustainable and natural way of life, it’s a delicious, exciting approach to food with endless and wonderful possibilities. I wish more of us could understand and share this great source of nutrition and pleasure.
“Great British Game Week is a fantastic opportunity to really educate our pupils on the significant nutritious benefits of game, it’s provenance and it’s sustainability”, said Head of Faculty of Art, Design, and Food , Mr. Mann, “game is an astonishingly versatile healthy ingredient and I am so glad that we have been able to take a whole school approach to champion game again this year at Queen’s.
Executive Chef, Jordan Bradley added that he welcomed the chance to, “serve dishes in the dining hall this week that will really showcase the wonderful depth of flavour that game has to offer”.
